Watermelon Salad

Watermelon salad

  • Half a watermelon, cubed (8 cups)
  • 1/2 small red onion, diced or thinly sliced
  • 1/2 cup fresh mint, chopped
  • 1/2 cup feta cheese, crumbled

    For the dressing:

  • 4 tablespoons olive oil
  • 2 tablespoon lime juice, freshly squeezed
  • 2 teaspoons of coarse sea salt
  • 1/2 teaspoon black pepper

    Directions: Mix watermelon, red onion and mint in a large bowl. In a separate bowl, wisk together olive oil, lime juice, sea salt and black pepper. Pour dressing over watermelon mixture. Stir well. Cover with plastic wrap and refrigerate at least 30 minutes. Sprinkle feta cheese immediately before eating.

Cinnamon Roll Waffles

Cinnamon Roll Waffles

For the Cinnamon Butter:

  • 2/3 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/4 cup unsalted butter

Mix and set aside. 

For the Icing Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla

Mix and set aside. 

For the waffles (makes more or less 6):

  • 2 large eggs
  • 2 cups all-purpose flour 
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil (or melted butter)
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt

In large bowl, beat eggs with fork or whisk. Beat in remaining ingredients until smooth. Heat up the waffle iron. Spray with non-stick cooking spray of your choice. Spoon mix into the waffle iron, leaving a little room to add in a few drizzles of cinnamon butter. Cook at the recommended time for the waffle iron. Carefully remove the waffle. Drizzle on icing and Enjoy.
